It is a hydrolase, especially acting on the cell wall of microorganisms. It generally exists in various human and animal tissues, secretory fluids, and some plants and microorganisms. It can dissolve the cell wall of Gram-positive bacteria and has a strong killing effect on it. It can also be used in crystalline protein lysozyme preparation to prevent food deterioration. It is widely used in food preservation (especially cheese and sake production), medicine (tablets, capsules, eye drops, and throat lotion), daily chemicals (toothpaste and cosmetics), baby food (breast milk powder), and scientific research.
